The key ingredient for a classic Wedge Salad is a good Blue Cheese dressing. We used to just buy it from the store, but it's actually pretty easy to make if you have the ingredients and somehow tastes better.
1 large or 2 small cloves garlic, minced
1 teaspoon sea salt
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
2 tablespoons olive oil
150 ml soured cream or plain yogurt or creme fraiche
2 level tablespoons good-quality mayonnaise
2 spring onions, finely chopped
freshly milled black pepper
40 g blue cheese, crumbled
Mix well in a small bowl in the order listed (that probably doesn't really matter). Leave to chill for at least 15 minutes, to allow the flavours to integrate better. Then shovel it on baby!
The original recipe called for mustard powder, but the Dijon substituted so well, we have adopted it. We also substituted regular purple Spanish onion for the spring onions with no ill effect.
